Discover the exceptional taste of Yemen with this rare micro-lot from Bait Alal, Al-Hayma (Hayma Kharijiya), Sana’a—a high-altitude coffee region renowned for its refreshing climate, blue-hued mountains, and centuries-old coffee heritage. Produced by the Bait Subaih family, this one-family lot reflects generations of pride, tradition, and deep respect for the coffee tree, believed by locals to have originated on their land.
Grown at an impressive 2300 masl, this Udaini variety undergoes an innovative Synthese Wassergeist process, including 75 hours of airtight water-tank fermentation, 173 hours in dark temperature-controlled tanks, and 19 days of drying on raised beds. Irrigated by seasonal rain and natural water tanks, this careful method enhances the coffee’s complexity, clarity, and terroir expression.
Hayma Kharijiya’s unique environment—its crisp mountain air, rich history, and challenging conditions—results in extremely low-yield harvests, making this lot exceptionally limited. One farmer contributed only 6 kg of cherries, showcasing the dedication required to cultivate coffee on such rugged land.
